Ingredients:

2 large eggs
1/4 plus 2 tablespoons pure maple syrup, divided use
1/3 cup apple-butter (brand made from only apples and apple cider)
4 tablespoons dairy-free margarine, divided use
2 1/4 cups finely ground almond flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped pecans
1 apple, peeled, core and chopped
1 teaspoon cinnamon
1/4 cup sliced almonds

Instructions:
Preheat oven to 325 degrees F. Prepare 12-cup muffin tin with dairy-free nonstick spray.

In large bowl, whisk together eggs, 1/4 cup maple syrup, apple butter, and 3 tablespoons melted margarine. In medium bowl, stir together almond flour, baking powder and salt. Add dry ingredients to egg mixture; stir until just combined. Stir in pecans and apple pieces.

Using an ice cream scoop, fill muffin tin with batter. In small bowl, melt remaining 1 tablespoon margarine with remaining 2 tablespoons maple syrup and cinnamon. Pour a spoonful over each muffin. Scatter almond slices over the muffins.

Bake for 20-25 minutes or until tops of muffins are firm. Cool in pan on rack for 15 minutes.
Makes 12 muffins.
